Lox

If you've never had Salmon lox, you don't know what you're missing!!! It's amazingly tasty...it's also amazingly expensive. This is definitely not a meal we make often. The other night though we found some Lox on Sale at Trader Joe's (love this place!!), so we grabbed one and enjoyed a rare treat :D!!. Now as I say, Salmon Lox are spendy! it's not a meal you want to make every week, unless you enjoy being broke!! I'll put down how we make them into a meal though, in case you'd like to try them one of these days!

BAGEL'S AND LOX

1 PKG. SALMON LOX
BAGELS (We use everything bagels)
CREAM CHEESE
RED ONION
CAPERS
ROMA TOMATO

TOAST THE BAGELS. SPREAD THE CREAM CHEESE ON THE BAGEL, ADD LOX/ONION/CAPERS/TOMATO...ENJOY!!

I never put Capers on mine, because I think they're gross. My husband loves them though so he would suggest to at least try them. In case you're wondering what Lox is...it's just smoked salmon. They're actually a better idea for breakfast, but breakfast or dinner it's still yummy!!

What's for Breakfast?

Baked French Toast Sticks Recipe
6 pieces healthy multi-grain bread cut into sticks
3 eggs
¾ cup milk
¼ cup whole wheat flour
½ teaspoon cinnamon
1 tablespoon maple syrup
1 teaspoon vanilla
pinch of salt
3 pears sliced into spears

Combine all of the ingredients except the bread and use an emersion/stick blender for 10-20 seconds to properly mix the ingredients
(What’s great is that you can make combine these ingredients the night before without the bread and give it a quick mix in the morning. The bread can be cut and stored in an airtight container too. It’s not a good idea to soak the bread overnight because it will turn into mush, not sticks.)
In the morning preheat your oven to 350 degrees F and place the sticks of bread into the egg mixture, gently toss to coat. Spray a 9×13 baking pan and place the sticks in one layer, not overlapping. Bake uncovered for 20 minutes, just enough time to get the kids dressed. Remove from the oven and use a thin spatula to release the sticks from the pan. On the outside they will look like toast and be easy to grab and go, but on the inside it’s soft and delicious and addicting. Serve in a cup with pear spears.  No need for dipping into syrup, this recipe is tasty enough!  Serves 4.

*I didn't come up with this recipe, but I suppose mixing the ingredients the old fashioned way works just as well.
