My BIG, FAT, GREEK Dinner

   Here at University Land there's a place called The Pita Pit, it's really good, but being married to a college student we don't have the money to eat out all the time. However we both really like Pita's. There filling and as we learned really easy to make! Now neither my husband or I are of Greek decent. I'm German and my Husband's Finn/Scottish/ and French, but we both like good food and trust me when I say that Gyro's are good!!! So this is what we had for dinner the other night! 




PITA RECIPE


1 PKG. GYRO MEAT
TZATZIKI SAUCE
1 PKG. PITA POCKETS
LETTUCE
1 CUCUMBER
2 ROMA TOMATOES
1 RED ONION
1 PKG. FETA


COOK THE GYRO MEAT ACCORDING TO INSTRUCTIONS. TOAST PITA POCKET (IF DESIRED), PUT TZATZIKI SAUCE ON BOTH SIDES OF PITA, ADD GYRO MEAT, LETTUCE, CUCUMBER, TOMATOES, AND ONION...ENJOY!!

Now, we use the pockets because they're easier to eat. They keep all the ingredients neatly tucked inside. You can also use chicken strips instead of the gyro meat. Gyro meat does have MSG in it, which we try to stay away from, but believe me when I say that it's still really good. Anyway, try them see if you like them. You can put any veggie in them and I imagine they'd taste pretty good. The Pita Pit has a whole array of veggies they use, we just like the ones listed above because they give it a nice crisp/fresh taste. Make it your own!!!

What's for Breakfast?

Baked French Toast Sticks Recipe
6 pieces healthy multi-grain bread cut into sticks
3 eggs
¾ cup milk
¼ cup whole wheat flour
½ teaspoon cinnamon
1 tablespoon maple syrup
1 teaspoon vanilla
pinch of salt
3 pears sliced into spears

Combine all of the ingredients except the bread and use an emersion/stick blender for 10-20 seconds to properly mix the ingredients
(What’s great is that you can make combine these ingredients the night before without the bread and give it a quick mix in the morning. The bread can be cut and stored in an airtight container too. It’s not a good idea to soak the bread overnight because it will turn into mush, not sticks.)
 In the morning preheat your oven to 350 degrees F and place the sticks of bread into the egg mixture, gently toss to coat. Spray a 9×13 baking pan and place the sticks in one layer, not overlapping. Bake uncovered for 20 minutes, just enough time to get the kids dressed. Remove from the oven and use a thin spatula to release the sticks from the pan. On the outside they will look like toast and be easy to grab and go, but on the inside it’s soft and delicious and addicting. Serve in a cup with pear spears.  No need for dipping into syrup, this recipe is tasty enough!  Serves 4.

*I didn't come up with this recipe, but I suppose mixing the ingredients the old fashioned way works just as well.
